Ingredients

  • 1 cup mashed cooked sweet potato (about 2 medium sweet potatoes, boiled or baked)
  • 1½ cups whole-wheat flour or all-purpose flour
  • ½ cup honey or maple syrup
  • ¼ cup vegetable oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda

  • Step 2: In a large bowl, whisk together mashed sweet potato, honey, oil, eggs, and vanilla until smooth and well combined.
  • Step 3: In another bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Step 4: Add dry ingredients to the wet mixture in two additions, stirring gently until just combined—do not overmix. Fold in nuts or raisins if using.
  • Step 5: Spoon batter into mini muffin cups, filling each about ¾ full.
