Honey Mustard Pork Chops

Ingredients

For 4 servings, gather these items:

  • 4 bone-in or boneless pork chops (about 1.5 cm thick, 600–700 grams total)
  • ¼ cup honey
  • ¼ cup Dijon mustard (or regular yellow mustard)
  • 2 tablespoons whole-grain mustard (optional for texture)
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar or lemon juice
  • 3 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh rosemary or parsley (optional garnish)

Direction

  • Cook these delicious chops with these easy steps:
  • Step 1: In a medium bowl, whisk together honey, Dijon mustard, whole-grain mustard (if using), olive oil, vinegar, minced garlic, paprika, thyme, salt, and pepper until smooth. Reserve 2 tablespoons of marinade for basting.
  • Step 2: Pat pork chops dry with paper towels. Place in a shallow dish or zip-top bag and pour the remaining marinade over them. Turn to coat evenly. Marinate 30 minutes at room temperature or up to 4 hours in the fridge.
  • Step 3: Preheat oven to 200°C (400°F). Line a baking sheet with foil and lightly grease or place a wire rack on top.
  • Step 4: Remove chops from marinade (discard used marinade). Place on prepared sheet. Bake 18 to 22 minutes, flipping halfway and brushing with reserved marinade, until internal temperature reaches 63°C (145°F) for medium.
  • Step 5: Switch oven to broil for the last 2 minutes to caramelize the glaze (watch closely to avoid burning).
  • Step 6: Let chops rest 5 minutes before serving. Garnish with fresh herbs. Serve hot with sides.
