Guiltless Banana Pudding
This creamy, no-guilt banana pudding is naturally sweetened, light, and deeply satisfying. It tastes like the classic comfort dessert but feels good for your body!

Ingredients
- 4 ripe bananas (2 mashed, 2 sliced for layering)
- 2 cups unsweetened almond milk (or any preferred milk)
- ¼ cup cornstarch
- ⅓ cup pure maple syrup or honey (adjust to taste)
- 1 tsp pure vanilla extract
- A pinch of salt
- ½ cup plain Greek yogurt (for extra creaminess and protein)
- Optional toppings: Crushed vanilla wafers, a sprinkle of cinnamon, or dark chocolate shavings
Direction
- In a medium saucepan, whisk together the cornstarch, salt, and ½ cup of the almond milk until smooth.
- Add the remaining almond milk and maple syrup. Heat over medium, whisking constantly, until the mixture thickens and starts to bubble (about 6 to 8 minutes).
- Remove from heat. Stir in the mashed bananas, vanilla extract, and Greek yogurt until fully combined and creamy.
- Let it cool slightly, then layer in glasses or bowls: pudding, sliced bananas, more pudding, and repeat.
- Chill in the fridge for at least 2 hours (or overnight for the best flavor).
- Before serving, top with crushed wafers, cinnamon, or chocolate if desired. Enjoy cold!’
