Ingredients

  • 4 ripe bananas (2 mashed, 2 sliced for layering)
  • 2 cups unsweetened almond milk (or any preferred milk)
  • ¼ cup cornstarch
  • ⅓ cup pure maple syrup or honey (adjust to taste)
  • 1 tsp pure vanilla extract
  • A pinch of salt
  • ½ cup plain Greek yogurt (for extra creaminess and protein)

Direction

  • In a medium saucepan, whisk together the cornstarch, salt, and ½ cup of the almond milk until smooth.
  • Add the remaining almond milk and maple syrup. Heat over medium, whisking constantly, until the mixture thickens and starts to bubble (about 6 to 8 minutes).
  • Remove from heat. Stir in the mashed bananas, vanilla extract, and Greek yogurt until fully combined and creamy.
  • Let it cool slightly, then layer in glasses or bowls: pudding, sliced bananas, more pudding, and repeat.
  • Chill in the fridge for at least 2 hours (or overnight for the best flavor).
  • Before serving, top with crushed wafers, cinnamon, or chocolate if desired. Enjoy cold!’
